Eid Cookies-كعك و معمول

كرات التمر
كل عام و انتم بألف خير. شارف شهر رمضان المبارك على الأنتهاء و التحضيرات لعيد الفطر تتم في انحاء العالم احتفاءا بأنتهاء الشهر الفضيل. هنا تجدون وصفتين للكعك و المعمول. الكعك في العاده يكون محشي بالتمر المطحون مع اضافة بعض البهارات اليه. نوعية البهارات تكون حسب الذوق الشخصي. المعمول في العاده يكون محشيا بالفستق الحلبي او الجوز مع اضافة ماء الزهر, ماء الورد, العسل او السكر للفستق او الجوز. العجينه اللتي استعملتها هي نفس العجينه للكعك و المعمول و مكوناتها هي
٢ كوب سميد ناعم
نصف كوب طحين ابيض
رشة ملح
اصبعين زبده, ما يساوي ٢٢٥ غرام او ٨ اونس, يعني كوب واحد من الزبده
بعد خلط المواد معا و فرك السميد و الطحين مع الزبده جيدا, تغطى العجينه و تترك لمدة لا تقل عن ٦ ساعات حتى يتشرب السميد كل الزبده
كعك بالعجوه
بعد ٦ ساعات, تضاف الخميره للعجينه و تخلط جيدا باليدين. اضافة الخميره مع الماء يتم بالتدريج حتى تصبح العجينه طريه و قابله للتشكيل
يتم تشكيل العجينه الى كرات بحجم كريات صغيره او متوسطه حسب القوالب و الاحجام المستعمله 
حشوة العجوه -التمر
ربع كيلو من التمر المطحون ناعم, يوجد في اغلب المحلات
بهارات الكعك , حسب الرغبه, انا اضفت لها خلطة بهارات الكعك الجاهزه مكونه من الشومر و الينسون المطحون و الحب الكامل, ممكن اضافة القليل من المحلب المطحون ايضا. يعجن التمر مع البهارات ثم يشكل الى كرات صغيره
يحشى التمر في العجينه و يشكل بأستعمال القالب الخشب او البلاستك. في العاده شكل كعكات العجوه تكون دائريه 
بأمكانكم تزيين الكعك بالملقط الخاص للكعك و لكن ذلك يحتاج الى مهاره و وقت كبير
حشوة الفستق الحلبي
كوب من الفستق الني -غير محمص او مملح- مطحون ناعم
نصف كوب سكر ناعم
ملعقه كبيره او اثنتين من ماء الزهر - بأمكانكم اضافة ماء الورد ايضا
ملعقتين او ثلاثه كبار ماء للخلط
يحشى الفستق في العجينه و تشكل بالقالب. انا استعملت القالب البلاستك للتشكيل و كانت النتيجه جيده
 يخبز الكعك في فرن مسخن مسبقا على درجة حرارة ٤٠٠ فهرنهايت لمدة ٨-١٠ دقائق او حسب فرنكم, الكعك يجب ان يكون مائل للون الذهبي و ليس البني
بعد ان يبرد الكعك يرش بالسكر الناعم و يقدم مع القهوه او الشاي

The Holy month of Ramadan is ending soon and the holiday, Eid al-Fitr will be observed and celebrated worldwide in couple of days. Wish you all and your families a very happy holiday. 
Here you will find two recipes for the traditional Eid cookies. The first recipe is for Date filled cookies, which are known as kaek bil ajweh. The dough is normally filled with ground dates with the addition of some spices to it. The spices that I used are pre-mixed cookie spices, such as fennel and anise, both ground and whole. You may use cinnamon, cloves, nutmeg or even cardamom, it is all up to your own taste. Ground Mahleb is also used. 
For the pistachio filled cookies, which is called mamoul, I added Orange Blossom water and powdered sugar. You may add honey if you like instead of the sugar. 
The dough I made is the same one that I used for both type of cookies.
Wooden cookie mold
Dough recipe:
2 cups fine semolina
½ cup white flour
A pinch of salt
One cup of Butter : 225 grams which equals to 8 ounces
Mix all the ingredients together. Rub with semolina flour and butter well. cover the dough and leave aside for at least 6 hours so the semolina absorbs all the butter. You may keep the dough up to 24 hours.
After 6 hours or so , add the yeast to the dough and mix well with your hands. You should add the yeast with the water gradually until the dough becomes soft and holds together to form a ball. 
Shape the dough into small or medium balls, depending on the size of your molds.
Date filling:
One pound (1/4 Kilo) of ground pitted dates.
Spices, I added a mixture of spices consisting of fennel and anise, both ground and whole seeds. Knead the dates with spices and shape them into a small balls
Fill the dough with the dates. Use a wood or plastic mold to shape the cookie. Usually the circular mold is used to make the date cookies.
You may use a special tweezers to decorate the cookies, but this takes a lot of skill and time.

Pistachio filled cookies- Mamoul
Pistachio Cookies
1 Cup of raw pistachios , not roasted or salted.
½ cup powdered sugar
One to two tablespoon of orange blossom water - You may add rose water if you like.
Couple of tablespoons of water for mixing the pistachios
Fill the dough with the Pistachio mix. use a mold to shape the cookies. I used a plastic mold and the results were good.
Bake the cookies in a preheated oven at 400 F for 8-10 minutes or depending on your oven. The cookies should be  must be golden in color and not brown.
Cool the cookies. Once cooled, sprinkle with powdered sugar and served with coffee or tea.

I love these cookies, I used to eat a lot of them when I was growing up in Dubai! so glad to find the recipe here. But Im not sure where to find mahleb here in Chicago.any ideas? I love youre blog!

You can find Mehlab in chicago at the middle eastern stores around Kedzie and Lawrence, or the stores that are around 95th. thanks for coming by.

Salam alaikum, thank you so much for posting these recipes. My husband is from Iraq and wanted me to make these kind of cookies for EID for his friends. I use to intimidated by these cookies but you made it look so simple. Jazalkhir. :)

Yes the cakes turned out very lovely. We gave them as Eid gifts for my husbands friends and they absolutely love them. Though I stayed up until about 4 in the morning working on them. Made almost around a 100 of them. Couldnt have done it without you :) Thanks so much, jazakalkhir.

Eid al Adha is not too far away, you may make your cookies ahead of time so you can rest and enjoy the holiday.
