والدي لا ياكل البيض الا اذا كان معدا بهذه الطريقه. اعتقد ان طعم البيض هنا محسن بكل الاضافات اليه من البقدونس و البصل و الثوم مع البهارات المطيبه له. لذا ساسمي هذه الوصفه ب عجّة بابا! يمكن اضافة الثوم حسب الرغبه الشخصيه لهذه الوصفه. هذه الوصفه ايضا معروفه في منطقة بلاد الشام ايضا و تحضر عجّة البيض بطرق مختلفه و مع خضار منوعه

المقادير*ستة بيضات *
*نصف كوب بقدونس مفروم*
*نصف كوب بقدونس مفروم*
* بصل مفروم *
*الملح, الفلفل الأسود ورشة من البهار*
*زيت للقلي*

يخلط البيض البقدونس المفروم و البصل مع البهار و الملح والفلفل الأسود
اغرفي حوالي كوب من الخليط واقلي في الزيت الحامي على الجانبين حتى تصبح محمره . تقدم ساخنه مع الخبز العربي الطازج و السلطه العربيه الناعمه.. وصحتين وهنا

My father is not a big fan of eggs, but he would eat eggs only this way, with onions, garlic, parsley and spices...so I will call this recipe : Omelet, according to my dad!
This is a known recipe in the Levant area . You may play around with the recipe and add different herbs or ingredients to it to make it your own. Garlic is optional in this recipe.

* 6 eggs
* 1/2 a cup finally chopped parsley
* One medium diced onion
* 2 cloves of minced Garlic (optional)
* Salt, Black Pepper and Allspice
* Oil for frying
Directions:
- With a whisk, mix all ingredients together to form a homogenized mixture.
- take one ladle of the mix and pour into the hot oil. Cook on both sides to get a nice golden color.
- Serve hot with fresh pita bread and small cut Arabic salad ( tomatoes, cucumber, dry mint, parsley, green onions, all seasoned and dressed with lemon juice and olive oil ). Enjoy!

My dad used to make this for us every once in a while, I remember he used to make it too salty so our favourite is his other omelet, the one with lots of veggies and spices! He adds flour to it as well :)

Noor, i am not sure if this recipe will be that good with cilantro, i never tried it. the reason i am saying that because cilantro has a strong taste that won't go well in my opinion with eggs :)

Hi Summer, this is one of my favorite recipes too and we add garlic to all of those ingredients. Hot or cold inside some arabic bread....yummy!

No Summer it looks delicious. you know, in Morocco, we make almost the same,it's called "OMELETTE TEKTOUKA" we add to your ingredients bell pepper and tomato.
