JORDANIAN MANSAF- منسف أردني

Jordan prides itself with the famous national dish of Mansaf. Mansaf is basically a meal of rice, lamb and aged yogurt that is made into balls and kept all year long called "Jameed" جميد . The best kind of Jameed is the one that come from the city of Karak in Jordan.


Although Mansaf is a meal that is still prepared in the Bedouin culture, but it has crossed the borders and became the national dish for Jordan. It is a crowd pleaser and a very satisfying meal.

Mansaf is served to prominent guests , as the main and only meal. Also it is served during celebrations of weddings and any other happy and sad occasion such as funerals or big gatherings.

The recipe is so s
imple and made into huge quantities to make everyone's stomach full, happy and content.

Four or five major ingredients are used in cooking Mansaf that is fit for a king, you need:
Rice, Lamb (ONE whole lamb most of the time used, but also depends on the number of guests), Jameed (Aged Yogurt), Ghee and Shrak Bread (Thin, round flat bread baked on a hot iron inverted wok).

Many recipes are found online to cook this meal, and all of them share the same ingredients with very little variations. My mother always made her Mansaf by mixing fresh yogurt and Jameed. Jameed tends to have a very strong flavor and smell that is not sometimes offensive to some people who are not used to such flavors. Some people make Mansaf with cooked fresh yogurt, but then it is not "original" mansaf!
Mansaf is also made sometimes with Chicken. Chicken Mansaf is considered not as prestigious as Lamb Mansaf if it is served to guests. Lamb Mansaf is considered the best of the best to serve to your guests.

المنسف هو أكله أردنيه مشهوره و تعتبر من أهم وصفات المطبخ ألأردني. يُعد المنسف الأكله ألوطنيه األأولى في ألأردن و مصدر فخر للأردن لأنها اشتهرت في انحاء العالم كأكله أردنية المنشأ, و هي من ألأكلات الشعبيه المحببه للعديد من الناس من أصول مختلفه و في دول عديده في العالم .
يُقدم المنسف للضيوف كعلامه على الكرم و الجود ألأردني المتأصل و المنحدر من العادات البدويه. يُقدم المنسف في ولائم كبيره في جميع المناسبات السعيده كألأفراح و ألأحتفالات على جميع أنواعها و أيضا يُقدم في ألأتراح و التجمعات الكبيره. يؤكل المنسف باليد و من طبق (سدر كبير) يوضع أمام الضيوف و لكن البعض يُفضل استعمال الملاعق

مكونات المنسف بسيطه و تُعد على الأصابع. الجميد من أهم مكونات المنسف بالأضافه الى لحم الخروف او الغنم, ألرز , خبز الشراك و السمن البلدي بالأضافه للقلوبات المقليه من صنوبر و لوز- هنا وجدت وصفه لعمل الجميد في البيت . أفضل انواع الجميد هو الجميد الكركي من مدينة الكرك في ألأردن.
الجميد هو عباره عن لبن مجفف على شكل كرات يابسه و تُحفظ لمده طويله من دون ان تفسد. الجميد له طعم و نكهه خاصه و البعض لا يستسيغ رائحته النفّاذه و الطعم الحاد, و لكن هذه النكهه محببه للعديد من الناس ايضا. في مصر و لبنان يُجفف اللبن الرايب و يضاف اليه القمح ايضا و يُحفظ فتره طويله و يسمونه بالكشك و له استعمالات عديده في الطبخ.

البعض يُفضّل خلط الجميد مع اللبن الرايب الطازج و هذه الطريقه تستعملها والدتي , و البعض يُحضّر المنسف باللبن الطازج فقط بدون استعمال الجميد و لكن الأكله هنا تصبح لبن مطبوخ مع ألأرز و اللحم, و يعتبرها البعض بأنها لا علاقه لها بالمنسف بتاتا

This is a good video showing and explaining the mansaf. I didn't understand what they were saying, but I could guess in some portions of the video. I wonder how many countries have national dishes that are cooked in weddings, funerals and special guests. Thanks for sharing.

Ahhh mansaf :-) I miss mansaf :-)I must admit when I first tried mansaf, I didn't like it. After trying it again and again as you do when you go an visit friends. We fell in love with this dish. Although Jabri is renowned to produce the best mansaf in Jordan; We preferred the mansaf at Al Quds. A fantastic small restaurant in down town.

Mae, you can look for it in Middle Eastern stores in London, i am not familiar with the city or where to buy middle eastern food there. if you do not find it, have it shipped to you by Aramex, EedEx or DHL from Jordan, i am sure there is such a service available.
