Kufta Bil Tahini- Ground Meat With Tahini Sauce-كفته بالطحينه

  • 1/2 KG fine ground meat (Beef or Lamb)
  • 1/2 cup parsley
  • 2 medium onions
  • Salt to taste, Black Pepper and Allspice
  • 1/4 cup cooking oil
  • 1/3 cup sesame paste (tihina)
  • 1/3 cup lemon juice
  • 1/3 cup water
    كفته بالطحينه
    Directions
    *Mix the meat with fine cut parsley and diced onions
    *Add your seasoning- Salt, Black pepper and Allspice
    *Shape into Kababs, the size of a small egg and place into a large pan
    *Add cooking oil and lightly fry the Kufta on the stove top to hold its shape
    *To prepare the Tihini sauce: Mix the tihina and lemon juice together well until it forms a smooth paste. 
    *Slowly add the water while stirring to keep the mixture smooth. 
    *Pour sauce over kofta. 
    *Cook on the stove top covered at a low-medium heat until the water has boil away to form a semi-thick sauce in the bottom of the pan (about 30 Minutes).  
    *Brown the top under the broiler 
    *Serve with Pita bread or white rice on the side

كفته بالطحينه
نصف كيلو من اللحم المفروم ناعم, لحمة بقر أو خروف ضمّة بقدونس مفرومه ناعم حبتين بصل مفرومتين ناعم
ملح و فلفل اسود و بهار حسب الحاجه
ربع كوب زيت لقلي الكفته
صلصة الطحينه
ثلاثة أرباع كوب طحينه ثلاثة أرباع كوب عصير ليمون حامض ثلاثة أرباع كوب ماء
الطريقه أخلطي اللحم مع البقدونس و البصل و أضيفي البهارات أقلي الكفته قليلا حتى تتماسك تخلّصي من السوائل و الدهون المتجمّعه في و عاء القلي أنقلي الكفته الى وعاء او صينيه للطبخ تحضير صلصة الطحينه
أمزجي الطحينه بالماء, أضيفي قليلا من الملح ثم أضيفي عصير الليمون حتى تحصلي على مزيج ذو قوام رخو
أضيفي صلصة الطحينه الى الكفته و أكملي الطبخ حتى تعقّد الصلصه و تتثخّر حوالي نصف ساعه أشوي وجه الصينيه حتى تتحمّر قدمي الطبق مع ألأرز ألأبيض أو تغمس بالخبز صحتين و عافيه

Oh I am so so happy! I had this when I was in Jordan and I kept pestering my brother to find the recipe during his travels. We hadn't found one that seemed 100% right but I think your recipe is just what we were looking for! Thank you again!

Lillian, i am so happy too that you found what you are looking for! this type of thing makes my day and night! make sure to add enough tahini sauce to the meat while cooking, and not dry it out like i did! :)

That sounds so easy and so good! I can just imagine the fragrance the allspice would give the kofta.

foodycat, i guess you have to try it to smell how great this dish is! it is very different than many dishes and has its own great flavors. i love using allspice in most of my cooking, i think i am fond with this spice and it gives the dish its middle eastern flavor to the fullest! thanks for coming by.

just one question: does that mean it is DOUBLE the ingredients for the tahina now? 2/3 cup tahina, 2/3 cup lemon juice and 2/3 water instead of 1/3 as you wrote? because you mentioned that it dried up and you had to add another cup of tahina sauce.

ياسمين, Thanks for your visit and comment here. I think you can make it with the original amounts of tahini and water, but do not over cook it so it does not dry out...but you may double the amounts from the start and just cook it until it is done but still has some liquid with it. thanks for noting that here. This looks great. I am going to try it tonight, as my husband requested it yesterday. I have never made the tahini version but maybe I'll find a new family favorite. I love the video & music. It makes me want to cook & (& dance a little too). I feel like I have my own instructor!

Salaams Summer!
I was watching the video for this recipe and you started with a small bowl mixing the Tahini, and when you poured it into the Kufta it was a large bowl... Did you add more water than what the recipe calls for? I'm confused... Sorry!!
