Upside Down- Maqloobeh-مقلوبة باذنجان باللحمه

ألمقلوبه من اشهر الأكلات الفلسطينيه, و تطبخ في المطبخ الفلسطيني بكثره و بطرق عديده. يمكن استعمال اللحم او الدجاج في طبخها و العديد من الخضار الموسميه, لكن أشهرها هي مقلوبة ألباذنجان مع اللحم أو القرنبيط باللحم او الدجاج. تسمّى المقلوبه بهذا الأسم لأن القدر تقلب في صحن التقديم و يصبح أسفل القدرعاليها
ألمقادير لمقلوبة الباذنجان مع اللحم:

حبتين باذنجان كبير, مقشرّ و مقطّع الى شرحات, مقلي بالزيت و يصفّى من الزيت الزياده
كوبين رز مغسول و منقوع لربع ساعه,

, نصف كيلو لحم خروف (ضاني) بالعظم او موزات بدون عظم ,مسلوق بالبهارات المطيبه مثل الهيل, البهار و القرفه مع ورقة غار مع ألأحتفاظ بالمرقه لطبخ المقلوبه

ملح, فلفل أسود, بهار, قرفه, هيل أو هال,

حبتين بصل مقطّعه الى قطع متوسطة الحجم و مقليه حتى تصبح ذهبية اللون

ألطريقه:

صفّي اللحم و ضعيه في قاع اناء الطبخ

ضعي الباذنجان فوق اللحم لتكوين طبقه أو طبقتين

صفّي الأرز من الماء و اضيفيه فوق الباذنجان- في هذه المرحله يمكنك اضافة البهارات المطيّبه الى الأرز و خلطهم جيدا أو بأضافتها على الوجه قبل أضافة المرق

أضيفي المرقه فوق الأرز حتى تغطيه كاملا بدون زياده, يمكنك أضافة قليلا من الماء حسب الحاجه لاحقا

أغلي القدر على تار عاليه في البدايه ثم على نار قليلة الحراره مع أستعمال القرص المعدني الواقي لمنع أحتراق قاع القدر. الطبخ قد يأخذ حوالي 20-30 دقيقه أو حتى ينضج الرز




أقلبي القدر في صحن التقديم, زيني المقلوبه بالصنوبر المقلي و قدميها ساخنه مع اللبن الرايب أو السلطه الخضراء

Ingredients:
*2 large fried Eggplants
*2 cups Rice
*1 pound Lamb on the bone, boiled with spices
*Meat broth
*Salt, black pepper, Allspice, Cinnamon
*Cardamom and Turmeric
*2 Diced and Fried Onions
Directions:
- Peel and cut the eggplants and fry till golden brown in color- drain from the oil on paper towels
- Wash , soak the rice for 15 min then drain before using.
-Cook the meat by boiling it with spices and fragrant herbs such as salt, black pepper, cinnamon, cardamom, allspice, and bay leaf. Make sure you have enough broth to use to cook the recipe.
-Fry your diced onions till they are golden brown in color, drain from the extra oil
Assemble your Maqloobeh:
- Lay down the meat in the bottom of the pot
- Lay the eggplants on top of the meat
- Add the rice on top of the eggplants. At this point, you may add Turmeric, cardamom, allspice, salt, black pepper and cinnamon to the rice and mix well before adding it to the pot or you may add the spices on top of the rice before adding the broth. Either ways will work fine.
- Add the meat broth to the pot just to cover the rice, about 1cm above the rice. You can always add more later on while cooking if needed.
- Bring the pot to a boil on high heat, then lower the heat , use a heat protection disk if you like to prevent burning. Cook for about 20-30 minutes or until the rice is cooked and fluffy.
- Flip the pot in the serving platter. Garnish with friend pine nuts if you like.
- Sever with plain yogurt or green salad.

Summer this looks fantastic. It even held together when you pulled off the pot! I've only had it with chicken, but it looks so delicious with lamb. I'll have to try it soon!

hi...if i have a maqlubah spice(my friends bought it from jordan) so what the measurement for the spice n the rice.

Mama Tun Nur Safiya, you can use up to 2 tablespoons of the spice mix you have, do not forget to add the salt.
